SINGAPORE — The dishes you grew up with are back. Royal Plaza on Scotts celebrates over 50 years of legacy with Carousel Remastered, a culinary showcase launching 17 April 2026. This limited-run series revisits the iconic flavours and dining styles that have defined Singaporean celebrations for generations, now elevated with contemporary flair and premium ingredients.
As Carousel prepares for its next chapter, the experience offers a final look back at the multi-generational dining memories created since the property first opened in 1974. This is where Singapore has celebrated for decades; the showcase honours the family favourites and traditions that have made Carousel a local cornerstone.
Tapping into a deep sense of emotional and food nostalgia, the journey unfolds by era, beginning with 1970s “Kampung Roots” and 1980s Western classics. Each menu captures the spirit of its decade, bringing the tastes you remember back to the table, remastered for a new generation.
Starting with the 70s – Kampung Roots


Desserts continue the nostalgic theme with Ondeh Ondeh Chocolate Lollipops, featuring a liquid gula Melaka centre, and a Pulut Hitam Cheesecake layered with coconut cream.
The opening chapter looks to the warmth of kampung dining, where bold spices, communal flavours and local ingredients shaped everyday meals.
At Carousel, these influences return with a modern touch. Highlights include Wagyu Beef Cheek Rendang, slow-braised for 12 hours with herbs and served with blue potato mash, and Kampung Curry Lobster, with braised slipper lobster in a turmeric leaf curry accompanied by smokehouse baguette.
A playful nod to Singapore’s street snacks appears in the form of a Kacang Puteh Cart, serving spiced peanuts, chickpeas and lentils in paper cones — recalling the roaming vendors once common outside cinemas and markets.
The menu also includes Smoked Ayam Panggang, a banana-leaf chicken roulade finished with sambal belado, and Ikan Goreng Berempah “Pasar Malam”, a crispy halibut fillet served with calamansi aioli.
A dining journey that comes full circle


The culinary showcase also reflects how Royal Plaza on Scotts has grown alongside Singapore, and how dining at the hotel has evolved with the city’s changing tastes, traditions and celebrations.
When the property first opened in 1974 as Holiday Inn Singapore, the first Holiday Inn in Southeast Asia, Orchard Road was emerging as a new centre of commerce, tourism and modern city life. In those early years, dining at the hotel reflected the aspirations of a growing Singapore, with venues such as Baron’s Table, known for its provincial German cuisine and European classics, offering the kind of international restaurant experience that felt both novel and indulgent at the time.
As Singapore became more cosmopolitan, so too did the hotel’s culinary identity. Over the decades, restaurants such as Café Vienna and Paolo & Ping mirrored the city’s widening palate, bringing different influences, dining styles and flavours to the table. When Carousel was introduced in 2007, it marked a new chapter – one that brought together the variety, abundance and global perspective that had come to define modern dining in Singapore.


Today, Carousel has become one of Singapore’s most recognised buffet restaurants, drawing diners for celebrations, reunions and special occasions.
